Simple, Healthy Oatmeal Pumpkin Muffin Recipe

Oatmeal Pumpkin Muffins - Before

As much as I love the idea of baking, I don’t do it all that often. First of all, who is going to eat all those delicious treats? I really don’t want it only to be me. Second, I absolutely hate doing anything in the kitchen that requires several bowls or tons of ingredients.

This weekend I just got it in my head that I need to bake some muffins. My two requirements were that they had to have pumpkin and oatmeal. First I searched Pinterest and came across a few tasty looking contenders, but then after a Google search I found the winner, which I adapted to create my own version.

An easy and healthy adaptation of's October Oatmeal Pumpkin Muffins
  • non-stick cooking spray
  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • ⅛ cup white sugar
  • 1 teaspoon salt
  • 1 teaspoon pumpkin pie spice
  • ¾ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1¼ cups pumpkin puree
  • ½ cup milk
  • 2 eggs, beaten
  • ⅛ cup maple syrup
  • ¾ cup quick-cooking rolled oats
  • ½ cup craisins
  1. Begin by soaking the craisins in hot water, and spraying your muffin pan with the non-stick cooking spray.
  2. Preheat your oven to 375 degrees F (or 190 degrees C).
  3. Combine all ingredients into a large bowl. Drain your crasins and also pop them into the bowl. Stir together until the batter has a uniform texture.
  4. Scoop the batter into your muffin pan, filling the cups evenly.
  5. Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean. Bake time can vary from about 20 minutes to 30 minutes, so you should definitely take a peek in the oven 20 minutes into baking.
  6. Remove and allow your muffins to cool.
  7. Enjoy!

Oatmeal Pumpkin Muffins - AfterNow these muffins are definitely on the healthier side of things, so if you’re used to double chocolate muffins, you might want to add some more sugar or maple syrup to amp up the sweetness. However, I think the craisins make up for the fact that I reduced the amount of sugar and maple syrup suggested in the original recipe.

It’s only been about 24 hours since I made these, and I’ve already demolished two. They are perfectly moist and delectable while also being satisfying without any of the guilt.

What kind of muffins do you usually eat? Are they more of a breakfast or snack food for you?

June 2012 Favorites

1. Ole Henriksen On the Go Cleanser - This huge bottle is still going strong. It smells lovely and cleanses without stripping my skin.
2. NARS Pure Radiant Tinted Moisturizer in Alaska Light2 – A really dewy tinted moisturizer that makes my skin feel amazing. Unfortunately since the weather’s been so rainy and I’ve been indoors working way too much, this shade has become a bit too dark. I am very tempted to buy the lightest shade though since the formula is incredible.
3. Clinique High Impact Mascara in 02 Black/Brown – The color and formula of this mascara give me naturally full lashes during the day.
4. Clarins Illuminating Cheek Color in 02 Soft Peach – An absolutely lovely color that’s hard to apply too much of and leaves a lovely highlighted cheek.
5. Chanel Ombres Contraste Eyeshadow Duo in 37 Sable-Emouvant – My first ever makeup from Chanel! These eyeshadows are easy to blend and the colors are ideal for an everyday natural eye.
6. Clarins Concealer Stick in 03 – This creamy concealer works wonders to cover up any redness I might have without looking caked on.
7. Pandora Sterling Silver Ring - A lovely little gift from my boyfriend. It’s dainty and perfect for stacking, I love it!
8. Bobbi Brown Corrector in Light Bisque – Remember some of those posts where I used to say I didn’t have under-eye circles? Yeah well those days are over. Since I’m basically either working or sleeping, mostly working, my under-eye area is absurdly dark. This corrector lights up those corners and doesn’t gather into any fine lines throughout the day.
9. Maybelline Mega Plush Volum’ Express Mascara in Very Black – Maybe it’s just me, but the color of the tube pulled me in. The formula is light and doesn’t flake off of my lashes. It volumizes but doesn’t clump, amazing!
10. Bobbi Brown SPF 15 Tinted Moisturizer Oil Free in Extra Light Tint – Something that my sister has been using forever and I first tried about two months ago. The light gel-like formula is heavenly and blends into the skin seamlessly, leaving it looking and feeling naturally perfect.
11. MAC 217 Eyeshadow Brush - Something that probably most people have had in their collections for years, but I picked up on my way to England in Duty Free. The brush fits brilliantly into the crease and blends colors superbly.

Clarins UV Plus HP Day Screen Tint Review

I’m sorry for my absence again. I feel like I’ve been apologizing so much for that recently :( It’s taken a while to get settled down here in England and finally get internet. I’ve also been working an absurd amount so the blog took a backseat for a bit, but I’m ready to start posting again since there are some things I really want to share!

About a week before I moved I went to the Clarins counter to try out their new Ever Matte foundation. After speaking with the lovely sales assistant, I told her how I prefer tinted moisturizers since I like products to even out my skin tone and not necessarily cover absolutely everything. She suggested to color match me to the foundation on one side of my face and test the new UV Plus HP SPF 40 Day Screen Tint on the other. After seeing the results, I was a bit disappointed in how the Ever Matte looked, but the other half was incredible. My skin looked amazing. Needless to say, I was sold and I purchased the tinted sunscreen instead of the foundation.

Due to the tint’s extremely fluid consistency, the bottle must be shaken before each use. It feels very light on the skin, but provides about a medium coverage. The finish is very natural and gives the skin a healthy radiance. I also love the fact that since it’s first and foremost a sunscreen, it protects the skin from any future damage and therefore enhances its health.

Unfortunately I haven’t been wearing this for the past week since England’s been cold and rainy. But during the beautiful weather my first week here, it was an essential staple and definitely protected my skin, leaving it looking incredibly even and healthy. I definitely recommend this to everyone since it would probably work wonders for all skin types during the warmer summer months.

Do you prefer foundations or lighter coverage tinted moisturizers? Have you tried any other tinted sunscreens?

Wishful Wednesday: To the Future!

I’m off to England today! I can’t even really describe how I feel, it’s such a mix of emotions. But the thing I’m wishing for today, first and foremost, is happiness and success! I’m anxious to start a new job and have so many lifestyle changes occur so quickly, but I’m extremely excited and optimistic! To the future!

A few things have also caught my eye recently and I would love to get my hands on once I’m settled. Maybe after my second or third paycheck I’ll treat myself to something… ;)

1 & 2. Lovely decorative cushions for the bed.
3 & 4 & 5 & 6. All of the new Liz Earle makeup has me drooling. I’d love to try the bronzer, blush brush, mascara, and concealer from the new range.
7. Something that has become hugely popular in the blogging world, but has actually been on my to-try list for a long time. Somehow the $19 it costs in the U.S. seems so much more expensive than £9.50.
8. This brand intriques me and the description of the cream sounds lovely.
9. Recently I’ve been using another Trilogy product that’s incredible and this cleanser is supposed to rival the Liz Earle Cleanse & Polish so I’m very curious!
10. The rest of these L’Oréal Volume mascaras have plastic brushes, which I can’t stand. But this looks promising since it has actual bristles.
11. A simple and clean bedside lamp.

What’s the biggest adventure you’ve taken in your life? What have you been wishing for lately?

Maybelline Dream Lumi & L’Oréal Magic Lumi Concealer

(Maybelline Dream Lumi- Ivory, L’Oréal Magic Lumi – Light)

So it seems that Maybelline and L’Oréal have both jumped on the bandwagon to create products similar to the famous YSL Touche Éclate and created their own versions, the Dream Lumi and the Magic Lumi (or in Europe, the Lumi Magique) concealers, respectively. I like both versions since they definitely brighten up my eye area. One thing that I can’t stand about the packaging is that with the twist system it’s hard to know when the product will actually reach the brush, and when it does it’s usually too much. I do have to hold myself back from using too much, since it is possible to make the eye area look cakey.

Have you ever tried the YSL Touche Éclate, Maybelline Dream Lumi, or L’Oréal Magic Lumi? What’s your favorite?

I’m Alive & New In: Inglot Eyeshadows

I’m sorry for the extremely long absence. I was a bit busy passing some exams and you know doing stuff like graduating :) I’m also slowly starting to pack up my life for the big move, since that’s happening on Wednesday already! I have some things I really want to share and have been busy taking lots of photos so that hopefully when I’m settling in England I’ll still have some posts lined up, until I can figure out a good blogging schedule there.

Now that I’m done rambling, let’s continue… Ever since I bought my first Inglot eyeshadows, I’ve been in love and I knew I had to pick up a few more before I left New York. So without any hesitation I popped over to the shop in Times Square before my last exam and got myself two Freedom System duos.

(L-R: 404, 405, 355, 421)

I made two duos instead of quad, because it’ll come in handy when I quickly want to grab something small. As you can probably tell I’m obsessed with warm bronzes, golds, and browns. The first duo I created is inspired by the NARS Isolde Duo. I also picked up the matte off-white shade because I have always wanted to own Bobbi Brown’s 02 Bone. 355 is a perfect dupe and I’m incredibly pleased with it! And the final shade is just amazing and once I had swatched it, I knew I had to get it.

If you haven’t tried any Inglot shadows yet, I cannot recommend them highly enough! They are absolutely brilliant! You can also see pictures and swatches of my first Inglot Freedom System eyeshadow quad here, if you’re interested in some different colors.

April 2012 Favorites

This month has gone by extremely quickly and it’s crazy that for May’s favorites, I’m already going to be living in England! Anyway, these are the items I’ve been using the most often and loving this past month.

1. Inglot Freedom System Eyeshadows - I absolutely love these shades that I chose and the quality and pigmentation is amazing.
2. Dior Hydra Life BB Creme – I cannot say enough good things about this BB creme. It makes my skin glow and is so incredibly easy to apply!
3. MAC Sheen Supreme Lipstick in Blossom Culture – The website describes this as a “soft pink with pearl” and it looks absolutely amazing on my lips. I love the formula and texture since it’s extremely hydrating and easy to wear.
4. MAC Paint Pot in Bare Study - I’ve been using this as a base when I apply eyeshadow and some days I just use it on it’s own all over the lid to brighten up my eyes. I don’t wear eye make-up everyday, but when I do, this is being used 9 out of 10 times.
5. Laura Mercier Second Skin Cheek Colour in Lush Nectarine – Maybe I’m cheating with this one a little bit, since I really only bought it a few days ago… But it’s incredible and I’m in love! It is basically fool-proof to apply which says a lot because I’m a mess when it comes to applying blush. And the shade, a soft peachy coral color, is probably almost universally flattering.
6. Nivea A Kiss of Moisture Lip Balm – A really simple little item, but this lip balm is my ultimate favorite. It isn’t waxy and applies easily because it just melts onto the lips instantly, so you don’t have to roughly sweep back and forth waiting for the balm to actually get onto your lips. It leaves my lips smooth and hydrated for hours so I only need to apply it about 3 times a day.

7. Estee Lauder Advanced Night Repair – A favorite from last month as well, I still love this serum and the way it makes my skin feel.
8. Alpha Hydrox 10% Glycolic AHA Enhanced Cream – Another favorite from March, this cream will be in my skincare routine for as long as its made. I think its a total gem.
9. Caudalie Beauty Elixir – A third and final favorite from last month, this facial spray is heavenly. The scent is incredible and the way it makes my skin perk up is brilliant.
10. Eucerin AQUAporin Active Moisturising Cream Light – A little goodie that my boyfriend sent me from England at my request. It does a great job of hydrating my skin during the day. It’s a really simple, no-frills, fresh moisturizer that lets my BB creme simply glide on.
11. Caudalie Hand and Nail Cream – This cream hydrates my dry hands and smells amazing.

In April I’ve also been loving stretching, which my hips are extremely grateful for and simply spending time with my family.
